I have a bit of a sweet tooth. I rarely turn down dessert and if I have a spare half an hour I’ll usually whip up a batch of cookies just because. I try to sneak in vegetables into my baking whenever I can and zucchini is perfect for that! Zucchini adds moisture and a nice texture and it takes on the flavour of the other ingredients. I was craving something chocolaty one morning and came up with these delicious chocolate zucchini oats. Simple and satisfying!

I used raw cacao powder for these oats. The main difference between raw cacao and your everyday cocoa powder is more of the nutrients are available in the raw cacao form. Raw cacao is higher in antioxidants and minerals. Magnesium is a big one! Ever crave chocolate during your period? You could be lacking magnesium. Topping these oats with cacao nibs is also a nice way to get those nutrients plus fiber and a little crunch!

Chocolate Zucchini Oats

Ingredients
1/2 cup oats
3/4 cup nut milk
1/2 cup shredded zucchini
1 tbsp raw cacao powder
1/2 tsp cinnamon
1 tsp vanilla
2 tsp maple syrup or coconut sugar
optional toppings – walnuts, chia seeds, hemp hearts, cacao nibs, fresh fruit, nut butter, yogurt, splash of milk, etc.
Directions
- Add oats, milk, zucchini, cocoa powder, cinnamon, vanilla and sweetener to a small saucepan and heat over medium heat until the milk starts to boil.
- Reduce heat to low, cover saucepan and allow the oats to cook and absorb the milk, stirring occasionally so the oats don’t stick to the bottom of the pan.
- Transfer oatmeal to a bowl and top with your favourite toppings.
- Enjoy!
Notes
- You may need to whisk the ingredients once added to the saucepan to break up any chunks of cocoa powder.
